Oven Baked Pan Seared Steak
Ingredients 2 lbs new york strip steaks 2 steaks or ribeye or top sirloin steaks 1 lb each steak 1 1 4 thick 1 2 tbsp vegetable oil or any high heat cooking oil like canola or extra light olive oil 1 1 2 tsp sea salt 1 tsp black pepper freshly ground 2 tbsp unsalted butter 2 cloves garlic.
Oven baked pan seared steak. Insert a digital meat thermometer into the thickest part of the steak to test for doneness near the end of the cooking time. Step 3 transfer skillet to oven. Thickness flip and let sear on other side for the same amount of time. Instructions allow the steaks to rest at room temperature for 30 60 minutes if you have time.
Cook sear the steak in the heated skillet over medium high heat until a dark crust has formed about 5 6 minutes per side reduce the heat if the meat is browning too quickly if you prefer a lighter outside crust then reduce the time slightly. I use 7 2 2 my homemade seasoning or use a seasoning. Preheat oven to 400 convection. Step 2 preheat the oven to 425 degrees f 220 degrees c.
Step 3 remove casserole dish from refrigerator. Ingredients 2 boneless beef steak 1 1 pounds about 1 1 2 inches thick 2 boneless beef steak 1 1 pounds about 1 1 2. Allow the steaks to rest at room temperature for 30 to 60 minutes if you have time. Add steak s and butter to skillet and cook until each side is well browned about 45 seconds per side.

Let steaks bake for 5 12 minutes depending on the thickness of the steaks and how you like them done medium rare medium etc. Just before steak s come out of the oven add 1 tablespoon 15ml oil to a cast iron carbon steel or heavy stainless steel skillet and heat over high heat until smoking. Preheat oven to 400 convection or 425. Trim and season steaks to your taste.
Heat oil in a large cast iron or other ovenproof skillet not a nonstick over medium high. Add orange juice cider vinegar and worcestershire sauce. Step 2 cook steak in skillet over medium high heat until a dark crust has formed 5 to 7 minutes per side reduce heat. Transfer your oven safe pan directly to the preheated oven.
