Gas Oven Not Staying Hot
You should be able to feel it warming up and staying warm.

If it isn t maintaining heat turn off the oven make sure it is completely cool and unplug the appliance from its electrical outlet. I think the problem here is the igniter is getting old and not always lighting the oven burner take the floor out of the oven then remove the flame spreader next set the oven to 350f the igniter should be glowing bright yellow to the point where you cant look at it if the igniter is glowing orange yellow then it s not always igniting the gas because its old. Open the door of the oven s broiler section.
For ovens without broilers remove the oven s bottom cover plate. For extra precaution turn off the breaker to the oven. Take off the screws which hold the heating element in place. Then turn your oven back to 350.
First thing to do is check the ignitor let the oven preheat up to temp. Watch the flame after it goes out the ignitor will stop glowing. When an oven stays hot it s usually because this switch has stuck in the closed position or the sensing bulb has developed a leak and lost its pressure. If at that point the temp shows the oven is cool say 100 degrees or so i would be looking at a board changeout. This can be caused by a faulty temperature sensor or a. Try something when the oven says it 350 and it is not calling for heat but oven is cold as you described turn the power off to the oven let it sit a minute or so then turn power on.
